Meet Your Dietitians
Founder, CEO, and Dietitian | New Orleans
Maria Sylvester Terry, MS, RDN, LDN
If Maria was a potato: I'd be creamy dill potato salad on this. Approachable, refreshing, and full of flavor. Great at parties!
Counseling Style: creatively educational, reliably funny, ADHD friendly. My sessions are a safe place to land; we'll take your concerns one at a time and create a realistic game plan you're excited to put into action.
Probably getting a little treat at: The Station in Mid-City for a salted sourdough chocolate chip cookie or La Boulangerie on Magazine for the very best almond croissant.
The ways Maria moves: I've gone from picked last in gym class to late-blooming athlete! I love to move my body in different ways, especially lifting at Krewe Fitness, rowing at ErgoFit, dancing in the Cosmonaughties, hiking in new places, and taking Hot Girl Walks all year long.
When it comes to cooking, Maria is: chopping up three ingredients, throwing them in the air fryer, and topping them with a flavorful sauce. Easy!
When I have the time and lots of counter space, I love to tackle big dishes like Beef Wellington, Frutti di Mare, and my grandfather's rice pudding recipe.
Maria, what is something you're REALLY freaking good at?
My first career was in English education, so there's nothing I love more than giving you the BEST analogy for approaching the problem you're facing. I make your sessions memorable and your nutrition habits feel like you're about to embark upon an exciting journey. Because you are! Plus, I am a certifiably expert cheerleader.
Availability: Not currently accepting new clients. Accessible via group coaching & membership.

Laurie Bell, MPH, RD, LDN
If Laurie was a potato: If I could transform into every single form of potato, I would. I'll go with the classique baked potato: still versatile and that crunchy skin on the outside is *chef's kiss*.
Counseling Style: Individualized, inclusive, and non-judgmental. My sessions feel comfortable and more like a conversation with a friend.
Probably getting a little treat at: Celtica, a French bakery near my house. My partner and I will walk over with the dogs for quiche Lorraine and a little sweet to share [their fruit tart is amazing].
The ways Laurie moves: Dancing in the Nola Cosmonaughties! A very close second is weightlifting. Both make me feel strong af 😎
When it comes to cooking, Laurie is: whipping up a rice bowl. I have the opportunity to get as creative as I want with different protein + veggie + flavor combos.
Curry with tofu, cauliflower, and potatoes? Yup! Poke bowl w/ fresh salmon, edamame, crunchy veggies, and a homemade wasabi mayo? You betcha!
Insert any kind of broth situation with rice and I'm in (hey, gumbo season!).
Laurie, what's something you're REALLY freaking good at?
I am REALLY FREAKING good at helping clients feel confident to fight off those icky restrictive feels whenever past dieting habits creep back up into the picture.
I'm good at finding opportunities for nutrition throughout clients' busy weeks and coming up with simple, and sometimes creative solutions that clients feel comfortable implementing even if they're just taking a habit out for a little test drive.
Availability: Tuesdays and Thursday evenings, Wednesdays, and Fridays. Accepting new clients in January 2025.

Maria J. Romo Palafox, PhD, RD
If Maria was a potato: I'd definitely be a fried potato, probably a curly fry! A total crowd-pleaser with a fun twist, always bringing a little extra flavor and excitement to the table.
Counseling Style:
1. Collaborative, co-creating manageable and enjoyable strategies.
2. Emphasizing cultural relevance and real-world practicality
3. Prioritizing individuality, respect, and client autonomy
4. Fostering self-love, body acceptance, and intuitive eating
Probably getting a little treat at: Ices Plain & Fancy. The salted caramel nitrogen ice cream is where it's at for me.
The ways Maria moves: dancing!
When it comes to cooking, Maria is: making her favorite meal lately - Molletes, a Mexican classic dish. Basically, it is an open faced sandwich where beans and pico de gallo are the stars.
Maria, what's something you are REALLY freaking good?
I am really freaking good at helping clients come up with alternative strategies. I work with clients to cultivate a neutral perspective on behaviors, moving away from the idea of labeling them as "good" or "bad."
I am great at creating "aha moments" so the client and I can understand what is making it hard for them to do what they want to do.
Availability: Thursday mornings. Now accepting new clients!

Autumn Seigel, RDN, LDN
If Autumn was a potato: hash browns -- breakfast is my favorite meal of the day!
Counseling Style: compassionate, motivating, reflective
You'll leave your session with a clear understanding of your plan and 1-2 SMART goals. You'll feel empowered and supported.
Clients often share that Autumn makes them feel fully in charge of their shifts, which in turn creates huge shifts in self-confidence and positive self-talk.
Probably getting a little treat at: Salt and Straw ice cream -- it's directly below my apartment!
The ways Autumn moves: yoga and hiking with the pups.
When it comes to cooking, Autumn is: prepping a charcuterie board. Dietitians like girl dinners, too!
Autumn, what is something you're REALLY freaking good at?
I am REALLY good at creating a safe space for clients to share their feelings around food, movement, their bodies, etc. that also allows them to guide the conversation towards their personal goals.
One of my skills is teaching clients about managing energy levels and blood sugars to balance their meals and snacks.
Availability: Mondays. Accepting new clients in January 2025.
Virtual + In-Person Dietitian | New Orleans
Ellie Spiller, RD, LDN
If Ellie was a potato: "A loaded baked potato, because I've got a little bit of everything."
Counseling Style: flexible, adaptable to your needs
Probably getting a little treat at: Piccola Gelateria or Creole Creamery in New Orleans
The ways Ellie moves: jiu jitsu, MMA, weight lifting, functional fitness
When it comes to cooking, Ellie is: grilling, cooking over a fire, or boiling seafood
Ellie, what is something you're REALLY freaking good at?
1. Reminding you that food exists in a context with nuance... sometimes, it's something else entirely that needs to be given attention and resources, rather than the food itself.
2. Empathetically recognizing that food and eating are not just "eating." There are psychological, sociological, and cultural elements that take individualized guidance to navigate.
3. Acknowledging progress and reminding you that sustainable progress happens a little at a time.
Availability: Friday afternoons and evenings, Saturday mornings and afternoons. Now accepting new clients!
